Extra Virgin Olive Oil:
This top grade, low acidity (under 1 percent), comes from the first pressing of the choicest, handpicked olives from the harvest. Olives are mechanically pressed, requiring no heat or chemicals. Palestinian extra virgin oil has natural antioxidants which help keep it from going rancid. Flavor, color & consistency vary, like fine wines, with different olive varieties, location and weather.
Virgin Olive Oil: This has higher acidity level because olives pressed are not necessarily top grade or may be from a second or even third pressing of the pulp.
“Pure” Olive Oil: This is the commercial grade oil found on most grocery store shelves. The oil is extracted using heat, high pressure and solvents from pulp and pits left after the first or second pressings or from low quality olives.
